Re: how do you bread?

Depends on my mood.

I'll use egg or yogurt or buttermilk usually.. sometimes I skip both and go straight to seasoning and then flour.

I bread with flour only, or sometimes breadcrumbs or panko. I've also breaded with Frenches onions, cornflakes, instant mashed potatoes, crushed pretzels..

I really just do what I feel at the moment!

If I'm just using the components you mentioned I will normally do egg, flour, breadcrumbs.

Re: how do you bread?

I use a combination of breadcrumbs and corn flake crumbs.

Crumbs, eggs, crumbs.

I think it does...and maybe it gets a little crisper too. I made chicken francese this way and the breading really stayed.

Mmmm good thinking for chicken franchaise especially. I find the breading gets really soggy sometimes. Thanks! I'll try it out!
