Hot Vegetarian Entrees?
So I'm planning a baby shower for my vegetarian friend. I think I've got the appetizers down and most of the buffet menu, but I don't really know any vegetarian entrees- all I can think of is vegetarian lasagna and eggplant parmesan- and I don't think that's really her thing. My mom suggested stuffed mushrooms, but she hates mushrooms so that's out. So far I have:
-Penne a la vodka -Sausage & Peppers -Chicken Francaise -Roasted Parmesan Potatoes -???
I have no idea what the other vegetarian option should be. Honestly, she'd probably be pleased as punch if it was grilled cheese. I think that's basically what she lives off of. I was seriously considering doing the grilled cheese sandwiches on top of tomato soup shooters, just since it classes them up a little bit. Not that this is going to be a fancy party- it's in my backyard- but it's going to be a LITTLE fancy at least. lol!

Also, do you think that's enough? There will be 15 women tops. Any help is greatly appreciated!

I kinda feel like the grilled cheese shooters, whle REALLY cute, are more of an appetizer.
What about stuffed peppers, mac and cheese, veggie quiche, or spinach pie?
Or, if you're set on doing the grilled cheese/soup shooters as an entree, then how about changing the penne a la vodka to pasta primavera or pasta with garlic, oil and broccoli? I think that's where I'm a little stuck, as a vegetarian...the penne with vodka sauce is essentially carby/creamy/tomatoey (that's a real word! ), which is the same feel of the sandwiches and soup.

They are definitely more of an appetizer, I agree. I'm just stuck- she's so picky and this is coming from someone who wouldn't be alive if it weren't for peanut butter.
I like the stuffed peppers idea but I just wanted something a little different than the sausage and peppers. I think there are only two vegetarians going in total, on being the honoree, so I wanted to make sure all the entrees were varied and I'm pretty set on the penne a la vodka since I know she really likes that as well.
I don't really know anything about quiches or spinach pie, but I'm definitely going to look into them, particularly the spinach pie. That's something that I kinda wanna try myself.
ETA: And we're doing mac and cheese bites as an appetizer!

Some before things that go along with the pasta/Italian foods that I love are zucchini pie, stromboli, tomato/mozzarella salad and a big tossed salad. I'm the only vegetarian in my Italian family, but these foods along with pasta are always big hits. Alsojust make sure there is no proccutto in the penned ala vodka.

OMG! This looks SO good!! I'm keeping this in the back of my head for ME! Lol! She's the strangest vegetarian- she hates mushrooms, cheese, and... come to think of it... most veggies. lol!
I like the idea of the noodles in a peanut sauce- she is a big thai food fan.
I actually really like the idea of doing other assorted sandwiches, but then I'd have to change the whole menu. lol! But I'm also going to keep that in the back of my mind. My SIL and mom are helping me do all the cooking so I'm going to ask them for their input, too.
Thanks for the ideas though, please keep 'em coming!

I flirted with vegetarianism for a while and this was my favorite recipe find:
Penne with Roasted Asparagus & Balsamic Butter
I made one addition, I added grape/cherry tomatoes with the asparagus as it was roasting.

I was going to suggest the stuffed portobellos. I have an awesome recipe with bulgur and roasted cashews that i make for Tanksgiving. I saw she doesn't like mushrooms. How long has she been a vegetarian?
I like the make your own burrito ba, or how about a twist on grilled cheese and doing some differnet quesadillas like with balck beans, jalapenos, avocado, etc

Just for space reasons I don't think the make your own bars would work. But I do like the idea of making fajitas ahead of time and serving them. I think I might go with that.
She's been a vegetarian for as long as I've known her which is about 6 years now. She's just picky as all hell!

i realize not everything on your menu is vegetarian, but maybe make the pasta dish vegetarian instead of doing penne a la vodka? just a suggestion.
if you want to stick w that though and you're making the food yourself, maybe you can just leave out the prosciutto, or if you're having it catered you can ask them to make it vegetarian.
that, w the roasted potatoes and the grilled cheese/soup shooters sounds really good! if you want more ideas and are making the food yourself, i have a lot of yummy veggie recipes i can FM you. if you are having it catered, idk where you live but there's a place in rockville centre that is vegan/vegetarian that you could order from that makes out of this world vegetarian versions of all the best italian recipes (like chicken parm and stuff). let me know if you want any of this info.
