homemade sauce

How do you make yours? I always just use canned crushed tomatoes, onion, garlic, olive oil salt, pepper, a bay leaf and maybe some carrots. I actually really like my sauce, but just wondering if I'm missing out on something better. So how do you make yours?

I think the key to my sauce is the grated cheese and/or cheese rind! I also put basil and a tiny bit of sugar to cut the acidity.

I would sub out the bay leaf for a handful of fresh basil...and no carrot. I also use San Marazano tomatos...expensive but so worth it. I also throw one or two browned italian sausage in as well.

I use can crushed tomatoes, browner onion and garlic, basil, parsley, salt, pepper, little sugar and a little red wine. I also brown meatballs and put the in. I do pass the canned tomatoes through a food mill to get all the seeds and junk out

I make huge batches of my own sauce, then freeze portion-sizes for DH and my dinner.

I dice half an onion (or a whole small onion), a few cloves of garlic and saute in olive oil.
I add 28 oz jars of whole peeled tomatoes, crushed tomatoes and diced tomatoes, and a small jar of tomato paste, and add lots of basil. I use an immersion hand blender to break up the whole tomatoes but still keep the consistency thick and let it simmer for a long time (hours).

I originally got a recipe from here a few years back, changed it slightly and it is the only way I make sauce. I love it! I HATE chunky sauce so it's perfect for me:

Olive oil (coat the bottom of the pot)
Thinly sliced garlic (I use a lot!)
3 lg. cans of tomato sauce (I use Tutto Russo or Red Pack)
1 lg. can tomato puree
1 small can of tomato paste
small palm full of dried parsley
small palm full of dried basil
2 bay leaves
salt and pepper
1/2 cup grated cheese (I also throw in a cheese rind if I have one)
Small onion. Peeled, but leave whole
1/4 cup of sugar

Add oil to sauce pot. Add garlic, DO NOT BURN. I cook until I can mash it with a fork since I like a smooth sauce. Use very low heat. Add rest of the ingredients, and stir well. I let my sauce sit on medium heat, mixing frequently for about 5 hours. When done, remove the whole onion & bay leaves. Also, I've used 2 purees/2 sauces and it was fine, you can play with it to make it thicker or thinner.

i put a little olive oil on the bottom of the pot and and minced garlic and chopped onion.
when they are a little brown and fragrant i add cans of crushed tomatoes, sometimes a little puree and depending on what consistency im going for, a little water.

i add in fresh basil, dried oregano, salt, pepper, bout 1/4c red wine, little sugar.
i also usually fry meatballs half way and then throw them in the pot to complete cooking along with short ribs to add more flavor.

i simmer on low with the lid ajar for 2-4 hours

1 giant can whole peeled tomatoes (or two smaller can)
1 can tomato paste
3 garlic cloves
a few tbsp olive oil
salt and pepper
oregano
parsley
basil

Put the tomatoes in a blender and liquefy them. Strain out the seeds.

Sautee garlic in a sauce pot just until you can smell it. Add liquefied tomatoes and bring to a boil.

In a separate small pot, bring about 2 cups water to a boil an add tomato paste. Break down with a fork and liquefy and bring to a boil. Add to tomato/garlic mixture.

Add salt and pepper to taste and about a tablespoon each of oregano, parsley, and basil.

Cover and simmer on stove top for at least one hour.
