Homemade sauce??
Usually tomato sauce is made from plum tomatoes but can you make a good sauce from regular garden tomatoes (what the hell are these called anyway )

Re: Homemade sauce??
I saved this link awhile ago because I want to make it that way too! I don't see why you couldn't use any tomatoes. You may have to adjust the amount for the size though.

Hope this helps! I imagine you can add and subtract things to your preferred taste.

Re: Homemade sauce??
I do it all the time. I often just do a quick sauce, by cutting up tomatoes, fresh basil, garlic, onion and EVOO. Always turns out fine.
I have to try to make my own sauce slowed cooked though.

Re: Homemade sauce??
I just made an awesome tomato sauce from fresh tomatoes from my MIL's garden.
get a big dutch oven... and heat it on med/high.
wash & halve the tomatoes (taste them too!) and place them face down in the dutch oven (I used maybe 9 tomatoes)... you can pile them. season them with some salt and pepper. if they weren't very sweet, add some sugar. add a teaspoon of vanilla extract (it's good, i promise!) let the tomatoes cook and soften... and press down on them with a potato masher to help release the juices. reduce the heat and let the tomatoes simmer for about 2 hours until they become a thick paste (it will reduce down A LOT).
smash some cloves of garlic (i used maybe 6 or 7, but I loooove garlic) and toss them in. add a ton of basil, roughly chopped or halved. and finish with some extra virgin olive oil.
YUMMMM!

Do you have to peel the tomatoes first??
Thanks

Re: Homemade sauce??
I don't... the tomatoes break down so much that you can eventually take the peels out of the sauce if you want

Re: Homemade sauce??
Just made this last night - the tomatoes were sooo ripe and sweet it was amazing.
I did a quick sauce too and only cooked for about 30 mins, so it had more of a fresh taste opposed to a deep marinaria that simmers all day.
YUM
