i don't eat meat, so mine is meatless. Chat Icon

i use 2 or 3 cans of tomatoes in thick puree (i either chop them up myself or i buy the stewed ones already) i use the puree, too, of course

i also throw in some sundried tomatoes

some fresh garlic, basil, oregano, a little olive oil, and chopped yellow onions

some red cooking wine

(i don't do measurements, i go by taste and change it up according to how i want it)

i also add a pinch of brown sugar (takes out the acid taste sometimes and adds a bit of sweetness)

salt & pepper, maybe a dash of red pepper flakes

if you want it thicker, some people use the little can of tomato puree to thicken it up.

i never buy sauce, i always make it myself now.Chat Icon

I'm sure you will have many variations but here's mine:

Olive oil
2 cans crushed tomatoes
1 can peeled san marzano tomatoes
2 tablespoons tomato paste
1 large sweet or spanish onion
4 cloves garlic
coarse salt
black pepper
red pepper flakes
dried oregano
dried parsley
dried basil
1/2 cup grated parm or romano cheese

Sautee chopped onions and garlic until sweated. season with salt and pepper.

add both cans of crushed tomatoes. add one can of water. I crush the plum tomatoes in my hand right into the pot. Add the tomato paste.

Stir well. Add all the rest of seasonings and stir again. Let it simmer (med or med low) with the cover ajar.

Cook for about an hour. Add grated parmesan or romano cheese and cook for another 30-60 min. Taste for seasonings and adjust to your taste.

I just did this last night with meatballs.

1 large can of tuttorusso chopped tomatoes
1 can of tomato paste
one med. onion (chopped)
6 cloves of garlic (chopped)
1/2 cup red wine (merlot)
1tbs of oregano
2-3 tbs of sugar (i like my sauce sweet)
A few drops of hot sauce for some kick.

In a pot I drizzle some EVOOl and saute the onions and garlic until its soft.

Then I add the reast of the ingrediants and simmer it for 30mins. Keep tasting it and add what you think it needs.

2 cans water
1 Package sausage
2 pounds ground beef (meatball recipe below)
Penzey's Spices (ONLY)
Basil, & Italian seasonings to taste
Salt/pepper to taste
1 tsp sugar

Meatballs
6 tablespoons of basil
4 tablespoons Italian Seasonings
2 pounds chopped meat
4 teaspoons of salt (kosher)
2 teaspoons of pepper
Eggs, and breadcrumbs
1/2 cup of parmesan cheese
(You want the meatballs wet) Mix them together and shape them. Throw them into boiling sauce uncooked with sausage (gives a great flavor to the sauce and the meatballs are to die for) Let it cook 3-4 hours.

Do you brown the sausage before? Also, how many eggs do you add? 2?

This sauce comes out sooooooo good! I only make homemade now. This is a large recipe so you can freeze some.

Sautee some garlic (4-6 cloves, chopped) in EVOO. Add ground meat (I use veal, pork and beef as well as sausage--about 1.5 pounds of meat and 4 sausage) and brown all over. Drain if you please. Add 2 cans of Tottarossa Crushed tomatoes ( I use the kind with basil) and 1 can of tomato paste. Add a couple of teaspoons of salt, pepper, crushed red pepper, oregano, sugar and 2 bay leaves. Bring to a slow simmer. Cover and simmer for 1-2 hours. Stir frequently. Enjoy!

PS- I don't really "measure" anything unless I bake, that's why my numbers are all approximate (about a teaspoon...)
