Any recipes you'd like to share that your DC loves? I'm hoping to find yet another way to sneak veggies in.

I have used the recipe in this thread since it was posted...I just add things that I have, like sweet potato or carrot that are purreed.

This is going to sound odd- but it's actually DELICIOUS
Get a box of Devil's Food Cake mix (needs to be devil's food- for the stronger chocolate flavor)
Combine that with one can of pumpkin and 1/2 cup of water.
Batter will be thick.
Spoon into muffin pan- either sprayed with Pam or use cupcake liners
Bake at 350 for 30 minutes.
Believe it or not - u don't taste the pumpkin at all- the devil's food cake masks it.
Tastes like a chocolate muffin...
My friend actually got this recipe from when she was on WW- they are like 2 pts a muffin.
No oil or eggs!
ETA_ we usually top with cool whip!
