homemade cheesecake...

I am making it for the first time... 2 of the recipes i have do not mention using a water bath. Do you use the same cooking time if you bake it in a water bath?

How do you make yours? feel free to share more recipes! Plain only... FIL would freak if it was flavored... which stinks cause i really want to make a pumpkin one!

I actually have a pumpkin cheesecake in the oven right now. I did read to do a water bath....I didn't do that though. I'm going to be scooping the cheesecake out to make pumpkin cheesecake cake balls, so the cake doesn't need to look pretty.

Here's the recipe that I followed: (It's for cake balls but you could just leave out those steps, and I added pumpkin)

I have about 4.5 hours before it's fully cooled for the cake pops and comes out of the pan, but if you haven't made it by that point, I can let you know how it did without the water bath!

DH makes a banana cream cheesecake every once in a while and has NEVER put it in a water bath.

thanks! seems most recipes don't mention it...but all my life i feel like I heard people say you should.. I think I will skip it Chat Icon

I've probably made 20+ cheesecakes in the last few years. I started out not using the water bath, and now I do. I feel like the cheesecake comes out more moist when I use the water bath.
It is a pain though because you have to wrap the pan really well. Mine leaks and there have been a few times the crust got wet.

I've been making cheesecakes for years, and I don't put it in a water bath, but I put water on the shelf below. However, now my oven is so small, I skip that step.

I always make this cheesecake:

But I don't do the cranberry topping. I also add 1/2 tsp of vanilla to the filling.

You can replace graham crackers for the crust.

I think it recommends the bath!

Bake for 10 to 15 minutes until golden brown. Remove from the oven and allow to cool while you make the cheesecake filling. Reduce the oven temperature to 325 degrees F. Place a tea kettle of water on the stove top to boil. We’re going to add hot water to the 9×13-inch pan to place under the baking cheesecake.

No matter what I do, it cracks. Sometimes I do the water bath, sometimes I dont, but I honestly don't even know the difference. Maybe it comes out a little moister.

I make my grandma's italian ricotta recipe which is moister than most. To the one I'm making tonight, IM adding white chocolate and raspberry sauce and putting it in an oreo crust.

Update: I didn't do a water bath. The cheesecake came out perfectly...no cracks, super moist, and delicious. I did have the pumpkin though, so I suppose that could've added to the moistness?

Like I mentioned before, I was making cake pops out of it, so I didn't use a spring form pan because I didn't need it to come out of the pan perfectly...which it didn't...if I was actually making a cheesecake to just be a cheesecake, then I would've had an issue getting it out. I'm not sure if the water bath has anything to do with it sticking though.
