He's finally eating... With question

Mason is finally starting to eat some real food. Not a much babyfood.
If anyone knows my story I've had issues with him getting to eat. He used to gag and throw up and hated lots of textures.
Well, now he's almost 2.5 and with some help of an OT, speech and a friend of mine he's eating.
My friend was really a huge help. I met her walking in the area. Her daughter is the same age and basically ha some issues with her lungs born. She never had a bottle and had huge feeding issues. She just gave me some tough love advise and I bribe him with tv.
Tough at first and now I pause the show, he bites then gets a few more mins of tv. Now he's eating without me bribing.
Last night he had turkey meatball, he's had a cheese sandwich and one he's having real oatmeal.
Yay!

Anyway, now that I have a sort of eating toddler I need some ideas for a working mom that doesn't cook too much.

Need lunch ideas for daycare and easy dinners for during the week.

That's great!! Does he like pasta? DD eats what we eat most nights, but if she's really tired and starving i'll make her pasta. It's her favorite, it's easy to make at night after working a full day and there are so many variations.

spinach ravioli
spaghetti with pesto
penne with peas & sauce
pierogies

Also try the applegate farms chicken nuggets, they are soft and easy to chew.

We're in NJ. Wegmans is usually good for healthier foods

I don't know if they sell them in the regular supermarkets up there (they are at Publix down here), but I know they are at Trader Joes and Whole Foods.

That is great news!! I had a feeling he was being a little stubborn too.

You can do meatloaf, turkey taco's (with the soft shell, some sour cream and shredded cheese), pizza, pasta with broccoli and garlic and olive oil, pasta with sauce and peas, mac and cheese. You can make the pasta a head of time and just make it how you want it. I would get a small pasta like baby bow ties or diatali. You can broil some fish fillet like flounder and just season with some salt, pepper and a squirt of lemon juice. That cooks really fast and it is really soft.

Erica, if Wegmans is your store, you can find a lot of things there. Our Wegs has their own brand of pre-made dinners in the frozen section (sort of like those all in one skillet meals) in a variety of different kinds-- italian, asian, tex-mex, etc. The organic aisle also has several options for chicken nuggets and patties that might be a good source for protein. GL!
