Help me with a substitute
Dh has Celiac disease. I am making a roasted vegetable sandwhich but the recipe calls for Pesto Sauce. The cheap packets that you can buy in the store are not gluten free. The ready made ones are but are so high in calories. I need a healthier alternative.
Here is the recipe:
GF Roasted Veg Sandwhich
GF Bread Butter Roasted Eggplant Roasted Zucchini Fresh Tomatoes 2 tbs prepared pesto 1 ounce fresh mozzarella

make your own pesto. its so high in calories because of the olive oil and nuts. so you can omit the nuts and just use a small amount of pesto

How about this recipe? It's more of a dressing than a thick pesto and it doesn't have the nuts or the parmesan cheese in it. It would be a good substitute for your sandwich and it's really easy to make! I make it all the time and put it on various things like salad, chicken, potatoes, etc. You can probably even freeze the leftovers too - though I can't vouch for that because I go through it so fast!
Basil Dressing -
1 cup lightly packed fresh basil leaves 1 large clove garlic 1 teaspoon grated lemon zest 1/4 cup lemon juice 3/4 tsp salt 1/2 tsp pepper 1/3 cup olive oil
blend the basil, garlic, lemon zest, lemon juice, salt, and pepper in a blender until smooth. Gradually blend in the oil. Season the basil sauce, to taste, with more salt and pepper, if desired.

Replace part or all of the olive oil with water.....I also came across this recipe on weight watchers (not sure if its good)
2 Tbsp pine nuts 2 cup(s) basil, leaves, fresh 1/2 cup(s) reduced-sodium chicken broth 1/4 cup(s) grated Parmesan cheese 1 Tbsp olive oil 2 clove(s) (medium) garlic clove(s), peeled 1/2 tsp table salt
Instructions Place pine nuts in a small skillet and set pan over medium heat. Cook until nuts are golden, shaking pan frequently to prevent burning, about 3 minutes. Transfer nuts to a plate to cool.
In a blender or food processor, combine nuts, basil, broth, cheese, oil, garlic and salt; process until smooth and thick. Yields about 1/4 cup per serving.

Ingredients 1 cup loosely packed, fresh basil leaves 2 garlic cloves 2 Tbs. water 1 tsp. olive oil 1/8 tsp. crushed, dried thyme leaves Instructions In a food processor or blender, process all ingredients until smooth (add an additional tablespoon of water if mixture is too thick to process)
