i'm curious too!!
my typical dinner is salmon marinated in either teriyaki glaze or lemon & pepper, broiled with a baked potato and either broccoli, brussel sprouts or some other veggies

I post this one a lot:
Dump chicken
ingredients 1 lb of boneless skinless breasts dried basil dried oregano salt & pepper a can of black olives (drained) 1 can of italian style diced tomatoes a small amount of oil for drizzling (I use the pam w/ oo)
Preheat oven to 350, spray a 9x13 dish with pam
sprinkle the chicken with salt, pepper, oregano & basil, lay the chicken in a 9x13 dish.
Dump the can of diced tomatoes on top of the chicken, try to spread it out so each piece is covered, then dump the olives on top of that, drizzle the top with oo or spray with pam
Bake for 25-30 minutes or until the chicken is cooked through

Healthy breakfast fritatta:
Note, I usually make this in advance on Sundays, it stays well in the fridge for 2 or 3 days. I cut off a slice and heat it in the microwave on work days.
Preheat oven to 375.
I finely chop onions and sautee in a skillet with a little olive oil. Add to that 1 box froz chopped spinach, defrosted and all the water squeezed out. You can also add chopped sundried tomatoes. Season with salt and pepper.
While this is sauteing, I mix in a bowl about 4/5 eggs. You can use only egg whites for even healthier version. Mix it together with about 1/2 cup of milk (low fat).
Turn off the stove and pour the egg mixture in. Place in oven for about 15 mins until the egg is cooked through in the center. (My skillet is oven safe so I do not transfer, if yours is not, just put the sauteed veggies in a baking dish and then cover with the egg)
Other variations: Add parm and or mozz cheese Use the frozen chopped broccoli in addition to or instead of the chopped spinach Can also add chopped peppers, really any veggie will work.

How healthy?
We try to eat healthy for the most part... not like Weight Watchers healthy though - KWIM?
A typical week will have 2-3 chicken dinners, 1 meat, 1 fish, 1 pasta, 1 "other"
As far as chicken... there are SO many ways to cook it! You can always roast or grill your chicken with any kinds of spices you like...
So we'll usually do 2 nights of roasted chicken with different veggies as sides. Roasted broccoli, roasted zucchini & onion, steamed broccoli, baked potato, salad, cucumber & tomato with balsamic vinegar and EVOO, sauteed mushrooms, roasted asparagus, sauteed green beans, sauteed broccolini... etc.
Meat - We typically do burgers with whole wheat buns, mini burgers (no buns) over couscous, meatballs....
Fish - I love tilapia piccata! It's so easy too... or we do fish tacos (seaso the fish with salt, pepper, chili powder, & coriander and broil) then break into pieces and put them in corn tortillas wtih shredded lettuce, radishes & scallions... you can make a quick salsa verde and serve with black beans.
Pasta - we use the Barilla Plus which IMO is delicious! we honestly can't tell the difference.. and even our teenage niece and nephew had no clue! We stay away from any creamy sauces..
For "other" - we do homemade pizzas... black bean tostadas... spinach and mushroom quesadillas, etc.
To me, being healthy means eating a nutritious diet where most of the things are fresh vegetables and proteins. We go really light on oils, no fried food, we try to stay away from processed/pre-packaged foods...

Cooked chicken and salsa... then build on it - add corn, black beans, rice, cheese, tortillas, taco sauce, salsa, black olives
You can use the tortilla as a "pizza crust", smush some black beans with chicken stock/water, spice them up to make "refried beans", top w/ chicken, salsa and cheese.
You can layer them in a round dish to make a mexican lassagna.
Make it a with some crushed tomatoes and jalpenos to make a soup
cut the chicken finer and make a dip/top for nachos

Get a big portabella cap, cut up the chicken - mix in some tomatoes and spinach - put into the mush cap, top with cheese and bake ***************************** Then you can try it with some steak, peppers, onions.....
