Headcount for buffet event?
I have a brunch buffet for dd and I was curious what you all would do for the headcount...obviously I'm paying per person and I know typically you lowball the number...

Id tell them 5 less than expected. Things come up last minute and there are always no shows. That way you aren't paying for extras. You can always pay extra that day if more show.

We just did a lunch buffet this past Sunday for her Baptism. I gave them the exact number and wound up having a bunch of last minute cancellations, so I wound up paying extra. It may make sense to give them a lower number. They told me I could pay for extras the day of if needed.

Same - then we adjust when we get there based on no shows/add ons.
