i've done it borth ways...

pancetta can be kind of expensive - KWIM? so you can always leave that out.

if i'm short on time i'll just do a quick marinara of just sauteed garlic and onions, a 28 ounce can of crushed tomatoes, salt, pepper, & red pepper flakes!

i think any red sauce would be fine though! if you have a frozen batch of sauce to use, i'm sure it would be delish!

i do have some left over slices of pancetta in the freezer.. maybe i will put it to some use!
we'll see!

cant wait to try this recipe!!
