Godparent question
If I am not doing a formal christening I do not assign Godparent's right? I am having the baby at St Catherines and I am hoping they have a chaplain or priest there to bless the baby while we are there. I would just assign someone in a legal document if something were to happen to DH and myself right?

You would need to assign a legal guardian regardless of the type of Baptism you do.

Godparents dont mean that is who is going to raise the baby should something happen to you and DH.

You are talking about 2 different things. Godparents are responsible for the religious upbringing of the child, whether its to assist their parents or legal guardians. You do a will to make sure you child is left to be raised by the people you deem fit.
I think but am not sure that you would need godparents no matter what type of baptism you do. Although when DS was baptized they gave us a book which said anyone can baptize a child if necessary, and they had instructions on what to do. So maybe in an emergency situation you don't need godparents but I am not sure otherwise.

If you are just having the baby blessed at the hospital, that does not require a godparent.
Whether the child is given godparents or not, you would still need to deem someone a legal guardian if something was to happen to you and DH.
Godparents are more of a religious figurehead...
