Giant Cupcake HELP - recipe, cooking and icing

I am making a couple of these for my DCs birthday as the cake. Those that made their own giant cupcakes, please help. I was reading threads on here that said that the cupcakes didn't come out of the pan, they were 'too' cooked or undercooked, etc.

Any tips?

Do I get a boxed recipe? How many do I need for 1 cupcake pan?

How do I make the icing?

ETA. If you did this, can you post a pic? They need to taste good, lol.
I also am going to do a separate one for a cake smash. Is chocolate ok or does it look like poop when smashed?

Boxed, two needed, we used 1 full and 1/2 of other.
DO not fill the cupcake pan 100%!
Fill 1/2 way.
Spray/ greased the cupcake pan as best you can.
I let it cool down completely before considering taking it out.

Icing: purchased the bucket of icing from AC moore, got icing bags and tools to do the flower tip design.
You need lots of frosting. I also used frosting in between the top/bottom to stick.

I overfilled the bottom so I carved some of the top, esp cause it gets that cake bump.

-my added touch,
I lined the cupcake pan with pink chocolate and let it cool, carved the bottom of the cupcake and fit it in so it looked like a cupcake liner.

I put in in fridge/freezer, got it cold enough that it had to fall out.

she melted chocolate and poured it in. put it in the fridge and once it was solid, it popped out.

I lined it, like taking the melted chocolate and coated the bottom of it.

Debbie's looks great!
I won't even show the one I made for my DH's birthday. Its a good idea to use the icing in a bag because I used a knife to do mine and it started crumbling everywhere!
I had no problem getting it out of the pan, and I only used 1 box of cakemix.

also what does everything think of a chocolate smash cake. do the pictures come out better if they are vanilla cake?

If you grease the pan with crisco and flour the cake will fall right out after it cools for 10 mins. I use a sandwich bag over my fingers, dip the bag in crisco and rub all over the pan everywhere batter will touch. Then add 2 tbsp flour and coat the whole area and shake out excess flour.......CRISCO WORKS EVERY TIME!

You could also add a box of pudding mix to the cake to make it even more delish! Whatever flavor you want......SO GOOD!

I got my cupcake pan at Michaels with a 40% off coupon from AC Moore, so they upped it to a 50% off coupon.

I only used one box of cake mix.

I colored the frosting with blue spray (also in the cake section at Michaels) and I bought big dot decorations from Michaels as well!
