Generally speaking, how many showings before a sale?
Or are there way too many variables to even make a general assessment?

Impossible.....
I have sold crappy houses in 1 day
And great ones have taken me 2 months of 4 open houses a week
No rhyme or reason

we had two really good offers the first week on the market, but both didn't work so.... than 3 months later after a bunch of bad or just ok offers, a good offer came in and we accepted
that was this time last year

I sold my house in the first week, on the first showing. I didn't even need an open house.
Definitely evaluate your first offer because your first offer a lot of times will be your best one. (ETA: My buyer grossly overpaid for my home and I got real lucky - right buyer for the right house).
It really depends on the condition of your house and how it's priced. Some sell right away. Some sit for a while.

We sold our first house in 1 day, first showing, first offer, house on market for 7 hours. No open house.
Buyer gave offer, we countered they met us close to asking price and we had a deal.
We were priced right and our house was in prestine condition.
However this also took place in 2007!
