GD gals....meal ideas?

My doctor wasn't thrilled with the numbers from my 3-hr glucose test and wants me to re-take in 2 weeks.
In turn, I'd like to alter my eating habits for the rest of this pregnancy to keep GD away, and both of us healthy.

Can anyone share some easy and yummy meals that have worked for you?

I eat six times a day, small meals each time. In general the requirements are basically: low carb, stick to whole wheat as much as possible, protein at each meal but in limited portion size, no sugar, lots of veggies, fruit 2- 3 times a day in limited portion size, no drinks other than water or milk (I drink a decaf coffee with milk every day though).

My typical meals for a day:
breakfast: two eggs, two slices whole wheat toast with butter. Decaf coffee.
morning snack: banana and Dannon Light & Fit yogurt (lowest carb yogurt)
lunch: a few slices of turkey, one slice of cheese, lettuce and tomato, oil & vinegar on whole wheat bread, small apple or pear.
afternoon snack: whole wheat crackers & a cheese stick.
dinner: small, thin chicken breast, small salad with light dressing, brown/wild rice.
nighttime snack (around 9 pm): PB&J on whole wheat English Muffin.

My numbers are rarely high & I've avoided insulin this pregnancy. I'm surprised you have to retake your 3-hour test. I would think that the OB would just send you for the diabetes class and have you start testing your blood sugar regularly (it's easier than the 3-horu test!).

Its really going to vary person to person so it is hard to say what will be "good" for you if you aren't testing blood sugars. I couldn't have anything white and absolutely no milk in the morning (even the little I put in coffee). I also could not have a clementine no matter how small it was! My morning numbers were the worst so the most carbs I could have was half a whole wheat english muffin. I couldn't have regular whole wheat bread (even one slice) but I could have 2 slices of weight watchers whole wheat. Here's my typically menu:

Bkfast: 1 egg, 1 slice bacon, 1/2 slice of cheese, and 1/2 eng muff--it was surprisingly filling. I probably could have had more eggs and bacon but I wanted to stay within my calories not just my carbs.

Snack: pear or apple

Lunch: Weight watchers whole wheat bread with turkey, cheese, lettuce, and mayo. Carrots

Snack: PB on whole wheat crackers

Dinner: chicken burger on whole wheat eng muff with 1/2 slice of cheese and grilled onions, broccoli with 1/2 slice of cheese

OR

Cup of barilla plus pasta with tomatoes, broccoli, and turkey sausage and olive oil and garlic

Dessert: 1/2 cup of skim milk and 100 cal pack of lorna doones.

I had to eat each meal at least 2 hours apart and no further apart than 4 hours. Depending on when lunch and dinner were going to be, sometimes I had a second afternoon snack of either yogurt and a polly string cheese, a small piece of fruit, etc.
