I have a Moroccan Cookbook that uses it in everything.
You can start off with Moroccan Eggplant w/ Lentils.
Prep and Cook Time: 35 minutes
Ingredients: 1 large onion, cut in half and sliced thin 5 medium cloves garlic, pressed 1 medium red bell pepper, cut in 1-inch squares 1 medium eggplant, cut into 1-inch pieces pinch of red pepper flakes 2 tsp turmeric ½ tsp garam masala 1 15 oz can garbanzo beans 1 15 oz can lentils, drained 1/2 cup tomato sauce 1-1/4 cups + 1 TBS vegetable broth 1/2 cup raisins 1 TBS chopped fresh cilantro salt and black pepper to taste
Directions:
Slice onion and press garlic and let sit for at least 5 minutes to bring out their health-promoting properties Heat 1 TBS broth in a 10-12 inch skillet.
Sauté onion in broth over medium heat for 5 minutes, stirring frequently. Add garlic, red bell pepper, eggplant, garam masala, and turmeric. Stir to mix well for a minute, and add broth and tomato sauce. Stir again to mix, cover, and cook over medium low heat for 15 minutes, stirring occasionally, or until peppers and eggplant are tender.
Add garbanzo beans, lentils, red chili flakes, and raisins. Simmer for another 5 minutes. Season with salt and pepper. Top with chopped cilantro.
Personally I'm not a huge fan of meats with fruits (for example chicken w/ preserved lemons and dried apricots), like most morrocan dishes are, but this one only has raisins in it, so I don't think the taste is bad - but you could omit it if you feel you won't like it.

Here's a recipe for a Bengali style chicken curry. It's very mild so you may want to throw in a green chili to make it spicy.
Bengali Style Chicken Curry
Ingredients: 1 whole chicken, cut up garlic paste (I usually puree 4-5 cloves of garlic in some water) ginger paste (puree 3/4-1 inch of ginger root in some water) 1 onion, chopped 2 cinnamon sticks, broken up 3 black cardamom pods 2 tsp. ground coriander 1 tsp. ground cumin 1 tsp. garam masala 1/2 tsp. red chili powder (or spiced to your liking) 1 1/2 tsp. turmeric 1 tsp. salt 1/2 c. low-fat plain yogurt 1/4 c. oil
Directions: 1. Heat oil on medium and sauté onion to golden brown (takes about 20 minutes or so). Sometimes I use olive oil and other times vegetable oil.
2. Add garlic and ginger paste. Continue frying for one minute.
3. Add in all the other ingredients.
4. Simmer covered over medium heat for 35-40 minutes.
Optional: Add a green chili during step 3 to make it spicy. This is a very mild curry!
It also makes a lot of gravy and my kids like it when I mix some boiled pasta (usually small shells) with the gravy. I guess you could call it curried noodles/pasta

I do a really nice Chana Masala. Google a recipe, its really easy! I made a giant vat of it for the school fair and all of it sold really quickly!

I make this often, but not with the mango. You can also use it with chicken and broil it in the oven.
