The pizza filled with sausage, ricotta cheese, chucks of ham (very small) and other stuff parsley eggs grated cheese I'm sure some other stuff but i forgot! OMG OMG OMG so good my mom is right off the boat she can cook her a $$ off

So excited to see A-Beetza-Gain..that's what we call it!
not sure of all the ingredients because I don't care for it but my family puts I believe 3 kinds of meats: ham, sausage and something else (big help, right?), ricotta cheese and I believe eggs.

I found this recipe- this is most like the one my mother makes with a few differences which I noted- She keeps her recipe in her head, so I have been learning by doing it with her. I do not have it down to measurements either (or down at all for the matter- YET). . .
PIZZA RUSTICA DI PASQUA
CRUST:
2 c. flour 2/3 tsp. baking powder 1/2 tsp. salt 3 tbsp. shortening 1 egg 1/2 c. cold water
FILLING FOR 2 PIES:
2 lbs. ricotta 1/2 lb. prosciutto, sliced 1 1/2 lbs. Mozzarella, sliced 6 hard boiled eggs, sliced 1/2 lb. grated Romano cheese 1/2 lb. pepperoni, sliced 1/2 lb. provolone, sliced 1/2 lb. Genoa salami , sliced 1/2 lb. ham, sliced (we do not put ham, instead, dry sausage)
Crust: Mix dry ingredients together. Blend shortening into dry ingredients with fork. Mix egg with cold water add to flour mixture. Mix until ball is formed. Divide dough in half. Roll out and line 2 deep dish pie dishes. Filling: Mix 1 egg, (1/2 cup dried or fresh Italian parsley- we do not put parsley) and a dash of salt to taste to ricotta cheese. Mix well. Layer all ingredients on pie shell as you would lasagna using all ingredients or until dishes are filled. Roll out the remaining dough and top both pies. Cut slits on top of each pie.
Bake at 400 degrees for 15 minutes lower to 350 degrees and bake until golden brown. Just before pies are done brush tops of crust with beaten egg. Remove from oven and cool completely. Keep refrigerated

Recipe for the Italian Pie
3 pounds ricotta a little grated cheese a little parsley 2 cups shredded mozzerella 1 stick pepperoni stick, no skin, chopped 1 pound unsalted ham in a chunk-chopped 10 eggs
MIX IT ALL TOGETHER
Buy ready pie crust-pillsbury pie plate pour in
With a fork make a design on the edges
tin foil the edges so it doesnt burn
cook for one hour at 350
Stick toothpick in- if it is dry it is done, moist cook a little more
cool it for a half hour
Makes 3 pies

I've had it with sopressata and capicole (sp??). I only know that b/c I went with a friend once to buy the ingredients and she wanted me to ask for the meat so she could laugh when I tried to pronounce it. So yummy!

we do it a liottle differently, my mom puts many mamy different kinds f cold cut meats and several kinds of cheese all in layers with scrambled egg in between to bind it, there is no chopped up hard boiled egg.
