I do a very basic one and I'll be coming back to this thread to see if anyone has something better.
I usually chop a whole onion, a couple of cloves of garlic, 3 or so ribs of celery and 3 or so carrots, 3 or four smallish potatoes peeled and diced and sautee in a bit of oil.
then I add bay leave, thyme, and old bay seasonong to the mixture. then I add a small about of thickener (2tbsp flour or 1 tbsp cornstarch) and sautee for 2 more minutes, and then 32 oz of fish or seafood stock and let that cook for about twenty minutes or when it comes up to a bubble and the veggies soften.
then I add 1 lb to 1.25 lbs white fish (haddock or cod, usually) with about 2 cups of whole milk and cook until fish is cooked through and flaked.
then I adjust seasonings...adding salt, freshly ground pepper as needed, and more old bay.
it's simple and straight forward...good for a work night. but it's just ok. I'd like something better.

o wow.. you actually make a roux!! I always thought to dump heavy cream.. so glad I posted it
I make a stew.. Sautee onions, garlic in olive oil. Add water, stewed tomatoes, and spices.. then taste then add cubed potatoes Rolling boil, I add fish (mostly catfish), shrimp and some calamari. Garnish with chopped parsely..

I make Gordon Ramsay's cod chowder.
I found this recipe online so I don't have to type it out .

I just do all cod and don't do the shrimp. I also leave out the potatoes and add extra zucchini.
