can't really say it is a recipe, but I can tell you how I make it.

Make a pot of sauce as you normally would. Or if you are the kind to us jar sauce, feel free.
Get two nice size egg plants, peal and slice.
Batter each piece in egg and then coat with bread crumbs.
Heat olive oil in frying pan; fry each piece of egg plant on each side.
Set egg plant onto paper towel.
In baking dish, spread thin layer of sauce on bottom of pan. Then evenly lay down one layer of eggplant. Add more sauce on top of eggplant, then sprinkle some parm. cheese, and a generous amount of motzarella cheese. Do this two or three layers.
Bake in oven at 350 degrees for 45 min, until bubbling and golden brown crust.

This is how I make mine, although sometimes I like to add a layer of ricotta as well.

I peel mine because I don't like the skin.

I also peel mine because I don't like the skin.

And before I do the egg and bread crumbs, I lay all the eggplant slices on paper towels (I make stacks), sprinkle them with salt, and put something heavy on top, then let them rest for a few minutes. The salt gets all the bitter liquid out of the eggplant.
