We're doing an 11am brunch and this is our menu:
~ french toast casserole ~ scrambled eggs ~ bacon ~ bagels ~ fruit salad ~ danish/coffee cake
We will have 8 adults and 1 toddler.
i usually do the same, and add cold cuts. i dont 'cook', too much trouble!

Re: Easter Brunch help
Definitely French Toast Cassarole!
Also, I would do:
2 Egg Cassaroles - one with meat, one without (possibly one with whole eggs, one with egg whites depending on your guests)
Bagels, with spreads -- flavored cream cheeses, a few jellies, butter
Muffins and/or scones
Fruit Salad or Fruit Kebabs
Cheese Platter - Brie, Manchego, Gorgonzola, Cheddar
Lox
Small Spiral Ham & Breakfast Sausage Links
Champagne, Orange Juice, Coffee, Tea, other juices, Bloddy Mary Mix (w/ vodka, celery, black pepper, tabasco)
