Does this sound right?
Three follies after 3 days of Gonal-F. 2 10's and 1 11 but E2 is only 78.5
Is the E2 going to soar or something? He did up my dose for the next 3 days but seems like something is off 
Has anyone dealt with a simialr issue?

3 days is way to early to see anything. 
ETA: I stimmed very slowly my first cycle. It's hard for your RE to know exactly what doseage is going to work, especially in the first cycle. How many IU's did they start you on?

Well, they had some pretty well defined follies on the U/S (he always shows me), last month also.
As for stimming, last month I did 150 Gonal-F for 8 days total...no dose change at all. Ended with only 1 follie and a real nice uterine lining (thank you very much  ) But BFN.
I asked the RE to be more aggressive with me. So, this month I did 3 days of 225 Gonal-F and got the above mentioned results. So, due to the E2 level, he upped me to 262.5 for three days with a f/u u/s on Monday. Guess he is seeing some sort of pattern with the E2 and is trying to get it under control before he has to commit me to South Oaks!!

Your estrodial level will go up as the follicles mature. You won't see real high numbers yet.
Estradial is approximately 100/per mature follicle. That's why when someones estrogen level does shoot up, they generally trigger. Anything over 2000 is a high chance of OHSS...but it also means a lot of follicles.
ETA: he probably upped your dosage so that some more follies can grow. The visible ones aren't that big yet and if he can get a few more it will increase your chances.
