Disney opinion
Doing a quick 3 day trip. DH myself, 5 year old DD and 2 year old DD
Was planning on MK, HS, MK as our schedule.
I'm starting to worry about HS not have much since we aren't star wars people.
Thought about half day at HS, but honestly paying that price it kills me not to spend the day!
Thoughts on a park for day 2 if we don't do HS??

For the ages of your kids, I would skip Epcot and do animal kingdom
Epcot is sooooooooo outdated and a snooze fest IMO but I can see where it's sorta cool for the different countries when you're older. I've skipped Epcot the last couple of times I went.
I do love AK and so do my kids.

My DD is 3 and didn't know star wars at all before going, but I think she would have loved the Jedi training at HS. Not sure when you are going and what will be closed, but I wouldn't count it out yet. I honestly didn't love animal kingdom and only spent a half day there.

My kids at that age loved Epcot. They loved going around the different countries to meet characters like Snow White in Germany, Belle in France, Alice in England, etc.

Those ages my kids loved MK as their top choice, followed by EPCOT and then their third choice was AK. They did not love HS as much at that age. I would do either EPCOT or AK. EPCOT has the nemo ride and turtle talk with crush and the living seas, journey into your imagination. My kids liked the land ride. Your 5 year old will like Soarin. If your 5 year old is adventurous she might like the green (non spinning side) of mission space. There is a play space for your two year old while me rides with your older child. My kids liked Ellen's universe, and they loved spaceship earth. There are princesses, and a cute boat ride in Mexico. Little stations for the kids to do art projects in different countries. Not sure f frozen ride will be open, but that will be new. They loved the dinner at Akershus and parading with the princesses.
