Hands down, you need to visit magic Kingdom at least one day, if not two. Maybe make one of the days a late one so you can catch the fireworks and parade at night.

Definitely 100% Magic Kingdom. We did 13 hours there and he napped in his stroller when he was tired. We stayed through til the fireworks, great time.
He also really enjoyed Seaworld.

My kids like (in order of preference):
Magic Kingdom Hollywood Studios Animal Kingdom EPCOT
Magic Kingdom is a must!!!! Then my DD likes Hollywood Studios b/c of the parade in the afternoon, Little Mermaid, Toy Story, Disney Jr Show and the car show. Then Animal Kingdom -- She loved seeing the animals, she loved playing the drums in Africa and the Finding Nemo show. She was still a little too young for the rides in the kiddie area except for the ride that was like Dumbo She likes EPCOT the least. Really the only thing she likes there is The Living Seas and the Character Spot (You meet and take pics with Mickey, Minnie, Donald, Goofy and Pluto)
Also she really like Typhoon Lagoon this past time. She loves the water and loved playing in the kiddie area.

Our last trip DD#2 was 34.5 months - so almost 3. DD#2 turned one on that trip.
DD loved the princesses - see if you can eat at Akershus - Norway (EPCOT) Princess Storybook meals (we did dinner - but they do breakfast lunch and dinner) - we took a photo with Belle, then had snow white, ariel, aurora and cinderella.
The girls 2 favorite parks were MK and EPCOT (there are a lot of princess opportunities there (Mulan in China, Aurora in France, Belle next to France, Jasmine and Aladdin in Morocco, Snow White in Germany.
After that it is honestly a toss up some people prefer AK over HS others the other way around. If you DC is a good sitter - and enjoys shows you might like HS. I found that although the girls love playhouse disney - other than that they weren't really into all the shows and many of the rides were geared for older children. They did enjoy the toy story mania ride, playhouse disney show (now disney jr), honey I shrunk the kids play area, and Muppets 4D movie. Otherwise they could take or leave the rest. I think HS is a good park for a 1/2 day at that age.
AK the girls always really enjoy. Yes there are older rides with height requirements but there was plenty for them to do. They love the safari ride, dinosaur ride like dumbo, bugs life 4D movie and several other things. AK is also a good park to do in the morning.
I think with kids that age an afternoon break is really helpful. We would go to one park and be there at rope drop (opening). We would get as much touring in as possible while the lines were the shortest- then would either eat lunch at the park and then leave - or leave and go back to our hotel around 1230-1 for lunch. We would do naps, take a swim, shower and head back to a park around 4 or 5 - have an early dinner then do a few more rides.
As far as MK goes - I would say - at that age you can pretty much do almost the whole park minus a few rides (splash mountain, big thunder mountain railroad, space mountain and stitches great escape) Otherwise you can pretty much do every other ride.
EPCOT - The girls also really enjoyed this park. They loved the nemo ride and the living seas, spaceship earth, journey into your imagination, the boat rides in Mexico and Norway. There are also a lot of character opportunities in World Showcase (and one in Future World with Mickey, Minnie, etc). There were also things like acrobats in china etc. They have art stations in many of the countries where your DC can make a mask or other art and craft.
As far as restaurants here are some entertaining or fun for little ones although there are a lot of decent ones not on this list- but they are more of a regular restaurant these have something to occupy the kids: Chef Mickey's- breakfast or dinner - mickey and friends Akershus Norway - for princesses- you get a photo with one princess and 4 others will come to your table. Crystal Palace for Winnie the Pooh and friends Cinderella's castle 1900 Park Faire - breakfast - alice and mary poppins, dinner is Cinderella, prince, step mother, step sisters Ohana - dinner (breakfast is character with Mickey) they teach hula lessons, coconut races, etc Sci fi drive inn - just a fun meal you sit in cars like in a drive in. Biergarten - they have a band and a dance floor all the kids get up and dance. Marrakesh - they have a belly dancer - the kids get up and dance. Coral Reef - one whole wall is their aquarium from the living seas - so you can eat and watch the aquarium (sometimes there are divers feeding the fish)
