Dinner Help...Sausage

I have a package of spicy sausage that I want to use for dinner tonight. Any suggestions?

I usually make a quick sauce with the sausage and some fresh tomatoes but looking for something different. Any ideas? Other than that or sausage and peppers?

Sausage w/broccoli rabe over angel hair

Sausage and pepper paninis w/provolone and caramelized onions

Crumbled sausage for pizza

Found a couple recipes:

Sausage Quiche

2 (8 ounce) cans refrigerated crescent rolls
12 ounces mild link sausage, cooked and cut into 1/2 inch pieces
1/2 cup chopped onion
1 tablespoon butter or margarine
1 (4 ounce) can sliced mushrooms, drained
2 (3 ounce) packages cream cheese, cut into 1/4 inch cubes
2 tablespoons chopped pimientos
6 eggs
2/3 cup light cream
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
Paprika

Directions

1.Unroll one tube of the rolls; press dough onto the bottom and up the sides of a greased 11-in. x 7-in. x 2-in. baking pan to form a crust. Seal perforations. Sprinkle sausage over crust. In a skillet, saute onion in butter until tender; add mushrooms. Spoon over sausage. Top with cheeses and pimientos. In a bowl, beat eggs, cream, parsley, salt, pepper and garlic powder; pour over all. Unroll second tube of rolls; seal perforations. Cut dough into 1/2-in. lengthwise strips. Use strips to form a lattice crust over top of quiche. Sprinkle with paprika. Bake at 350 degrees F for 50-55 minutes; cover loosely with foil if browning too quickly. Let stand 10-15 minutes before cutting.

Sausage Casserole

1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
1/4 cup butter, melted
12 ounces mild Cheddar cheese, shredded
1/2 cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Directions

1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
2.Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
3.In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
4.Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

Spicy Sausage and Rice

28 ounces fresh, ground spicy pork sausage
1 cup uncooked long-grain rice
1 slice onion, diced
3 cloves garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (28 ounce) can whole peeled tomatoes, crushed
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper

Directions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a skillet, brown sausage and drain grease. Stir in rice, onion, garlic and peppers. Cook 5 minutes. Stir in tomatoes, chicken broth, salt, pepper and cayenne pepper. Pour into 9x13 inch pan.
3.Bake for 1 hour or until rice is tender and most of the liquid is absorbed. Or, at this step, you can cover and freeze it.

Sausage and Bean Casserole

1 pound sweet or hot Italian pork sausage, cut into 1-inch pieces
1/2 pound ground beef
1 small onion, chopped
1 (6 ounce) bag fresh baby spinach leaves
1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/4 cup milk
1 (15 ounce) can white kidney beans (cannellini), rinsed and drained
1 cup Pepperidge Farm® Herb Seasoned Stuffing
1/2 cup crumbled blue cheese or shredded Cheddar cheese

Directions

1.Heat the oven to 350 degrees F.
2.Cook the sausage, beef and onion in a 12-inch oven-safe skillet until the sausage and beef are well browned, stirring often to break up beef. Pour off any fat. Stir in the spinach and cook until the spinach is wilted.
3.Stir the soup, milk and beans in the skillet.
4.Stir the stuffing and cheese in a small bowl. Sprinkle around the inside edge of the skillet.
5.Bake for 30 minutes or until the sausage mixture is hot and bubbling

Sausage Potato Casserole

1 pound bulk pork sausage
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
3/4 cup milk
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups thinly sliced peeled potatoes
1 cup shredded Cheddar cheese

Directions

1.In a large skillet, cook sausage over medium heat until no longer pink; drain. In a bowl, combine the soup, milk, onion, salt and pepper. In an ungreased 11-in. x 7-in. x 2-in. baking dish, layer half the potatoes, soup mixture and sausage; repeat layers.
2.Cover and bake at 350 degrees F for 1-1/2 hours or until the potatoes are tender. Uncover and sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

Defintiely pasta with sausage and broccoli rabe.

I also like to just throw stuff together... this was good:

crumble and brown sausage, remove from pan for a bit.

in pan sautee garlic in the sausage drippings, additional EVOO will probably be needed. I add sautee fresh spinach and various mushrooms and season with crushed red pepper, black pepper, italian seasoning and the degalze with white wine, i add chicken broth sometimes as additional liquid intead of more fat/oil. After poured over pasta you might want to add some of the pasta cooking water to keep moist instead of adding too much oil... to keep it more figure friendly.

I agree with the above poster with the sausage and pasta...makes me want to change my dinner option tonight!


Also, Zatarains Jambalaya rice taste really great with sausage in it.

break up the sausage and cook in fry pan (like you would chop meat)

cook 1 box whole wheat penne

when the sausage is done, add 1 can petite diced tomatoes w/ liquid.
add enough water to make "sauce"

when pasta is almost done, add 1 large bag baby spinach to sausage.

Mix pasta and sausage together - serve w/ garlic bread and parm cheese
