I tried it years ago in Louisiana...it reminded me of shrimp, just a little meatier but not as dense.

I agree it's kinda like shrimp, but a little lighter. IMO if it's not seasoned well it really has no distinct flavor.

Everyone says it's similar to shrimp. I absolutely cannot eat crawfish. We used to catch them as part of an environmental science class I had at CTY. I just think of that and I can't eat them.

I ate them in LA - they called them "mudbugs" They were heavily spiced, so to me they were kind of salty. Def not as meaty as shrimp.

I LOVE crawfish!! My favorite is just crawfish boiled in seasoning (its a little messy to eat though and you need someone to show you how to open them ) don't forget to **** the head - its delicous (even if it sounds gross)!
The meat is also really good in pasta and you could also try crawfish remoulaude....

I have crawfish all the time at Ruths Chris, Thom Thom (in the jambalaya) and at The Bayou. We have it in NOLA too.
It's yummy, very similar taste to shrimp - depending how you cook it and what you put on it, or put it in....
