Delicious Soupy Escarole and Beans for the Italian Hubby

I just found this recipe but tweaked it to make it easy. I made it last night and its delicious.

Here is the recipe with my tweaking:


2 Pieces of Bacon
1 Tablespoon of Olive Oil
1 Head of Escarole, rinsed
2 Garlic Cloves, pressed or chopped fine
1 Can of Chicken Broth
1 Can of White Cannelli Beans, Drained
1/8 teaspoon of Red Pepper Flakes
2 Tablespoons of Parmigana Cheese (optional)

DIRECTIONS:
In a large pan, cook bacon for approximately 7-8 minutes over medium heat until crisp.
Discard bacon and leave the fat in the pan.
Add Olive Oil to the pan.
Heat for 1 minute.
Add escarole and sautee for 3-4 minutes, stirring constantly.
Add Garlic and cook for 2 minutes more.
Add Chicken broth, drained beans and red pepper flakes.
Cook for 5-7 minutes, covered.
Serve in a bowl with parmigana cheese sprinkled on top.

mmm, sounds good! Just checking, the bacon is just used for flavoring, or do you crumble it on top after it's done? TIA!

you throw the bacon out and just use the fat from it thats left in the pan
