Decorating Icing?
I am doing a Lightening McQueen Cake and the entire cake is using the star tip. What kind of icing should I make? THe wilton buttercrea with the butter and shortening doesn't taste that great to me, I really preferred whipped iving but that is horroble to use when decorating.
My mom suggested a cream cheese icing but I thought that might be too thin also.
Can I make the wilton with all butter so it would be 1 cup butter, 4 cups sugar and vanilla, or could I add meringue powder to the cream cheese one?

How do you make your cream cheese icing? Mine is really thick!
I beat together 1 box of cream cheese at room temperature with 1 stick of room temperature butter. When that is light and fluffy I add 1 tsp. vanilla and 3 cups of powdered sugar (cup by cup) and continue beating until creamy and smooth!
You can definitely do a buttercream without shortening!
For my buttercream I use 4 sticks of softened butter and I put them in the mixer until they get nice and fluffy. Then I add in 5 cups of powdered sugar (cup by cup). Then about 2 tbsp of pure vanilla extract. I whip this up until it's super light and fluffy! (That's for basic vanilla).

Cream Cheese frosting my mom makes is butter cream cheese and powdered sugar but I think there are 2 bricks of cream cheese 4 cups sugar and 1 stick of butter, but I am not positive on that.
I read online that cream cheese was not thick enough, I have not compared it though, just didn't want to make it color it and then have it be too loose since it is a PITA when doing the stars all over with runny icing.
I will check out Bunny Woman's on Wilton.
I did make two batches of the Wilton BC for another recipe and realized that the first one I didn't put the vanilla in since I didn't have clear vanilla, the second batch I did add regualr vanilla and it tasted way better. So maybe I can do the Wilton but just with clear vanilla so it will be white.

I wouldn't use cream cheese because it gets really soft really quickly when it's not refrigerated. And not everyone likes it.
I'd go with the Wilton BC recipe. I have an amazingly delicious BC recipe....but it's not great for decorating with the star tip because it gets soft pretty quickly (sooooo delicious though!)

the only change i make is that i dont have popcorn salt, so i just dilute it in hot water, instead of luke warm water.
BUTTERCREAM ICING From: Bunnywoman Link
1 cup Crisco shortening 1 cup butter (can use salted or unsalted)- softened 1/3 cup luke warm water 1 tsp popcorn salt 1 tsp clear vanilla 1 tsp almond extract 1 tsp butter extract 2 lb. bag of powder sugar
**** I recommend using a stand-up mixer (Kitchen Aid) for this.****
Cream together the butter and Crisco until nice and fluffy. (I use speed 6 for this on my KA.) When it lightens in color (almost white) it is ready for the next step.
Measure out the luke warm water in a standard measuring cup and dissolve the popcorn salt in this water. I then add the flavorings to the cup. Stir it up well with a spoon. Turn your mixer speed to the lowest possible setting and add in the powdered sugar slowly. Alternate back and forth with the water mixture. Keep the mixer on low until all liquid and powdered sugar are combined. Once combined then turn the mixer up a notch and mix well. Approximately 2-3 minutes.
Heavy cream or milk can be substituted for the water too. This will make for a smoother, creamier frosting. Refrigerate your cake if you use these.
You can mix and match flavorings in my recipe. I have done all sorts of different combinations. I love Lorann Flavorings in this too!!!!! They have over 30+ different flavors!!!!!
This will make what I call between thin to medium consistency icing. I can frost my cakes just fine with this and do simple borders as well.

You can make popcorn salt by putting Kosher salt in your food processor & pulsing about 10 times untill it is powdery.
Can someone tell me why there is shortening in the buttercream recipe? I have made buttercream before & it only uses butter. Is the kind with shortening better for piping?

Shortening makes it better for piping. Also if made with all butter you can't leave it out.

Wow, thats an interesting recipe! I never heard of popcorn salt, and I am surprised that there is salt in Buttercream! The only problem for me would be that I can't buy Crisco in the UK, so sad huh?
I might bring some back with me and see how this recipe goes. I would love to try it. Thanks so much!

Here's the recipe I've been using for my cupcakes and I am able to use different tips with no problem.
2 sticks unsalted butter 3-4 cups sifted confectioners sugar 1/4 teaspoon salt 1 tablespoon vanilla extract up to 4 tablespoons milk
Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups powdered sugar and turn the mixer on the lowest speed until the sugar is incorporated. Increase the mixer speed to medium and add vanilla extract, salt and 2 tablespoons of milk, beat for 3 minutes. If your frosting needs to be thicker, add the rest of the sugar. If it needs to be thinner, add the rest of the milk.

Yes, and I kept meaning to ask you if you had it but then I forgot. Oh well, I am sure it will be used again, and I got it for 50% off too.
I used the Bunnywoman recipe and it tasted good and worked great. thanks for the help.
