This is a really good & sappy one that I love:
MY DADDY'S HAND
Daddy, Take my hand in yours and you will plainly see, How very much I need you now to love and care for me. As my little hand grows, I will need you even more, Everything I do in life, I have never done before. Teach me to be kind and loving, sharing and forgiving, Show me through your acts of love the pure joy of living. The years will pass by quickly and one day I will be grown, I will pass what you have taught me onto children of my own. Hold me always in your thoughts and remember when we are apart, The special love between a child and a daddy's heart.

OMG, that is perfect then!! You'll have to post it, it sounds too perfect!!
I was trying to put together something for DH too of him holding DD's hand...still working on it!

My Daddy
In all the things I try to do, I want to do them just like you.
I'm watching every move you make, and trying to take each step you take.
Although right now I'm sort of small, when I'm with you I want to be brave and smart. 'Cause I love you Daddy with all my heart!
When I'm older I'll be so glad, If I grow up to be JUST LIKE DAD!

I love this poem. I actually gave it in a frame to my DH for Valentine's Day from my DS. Here is another one I found:
A Little Boy Needs Daddy
A little boy needs Daddy For many, many things: Like holding him high off the ground Where the sunlight sings!
Like being the deep music That tells him all is right When he awakens frantic with The terrors of the night.
Like being the great mountain That rises in his heart And shows him how he might get home When all else falls apart.
Like giving him the love That is his sea and air, So diving deep or soaring high He'll always find him there.

I used this one last year, but changed it to be "A Little Girl Needs Her Daddy" and changed all the pronouns accordingly. I put it in a frame with a pic of DD. DH loved it.
If you're using the pic of DH holding DS's finger, I really like the first poem.
