Cooking question - BBQ Rubs

Sorry, I know this should be on the recipe board, but this is for dinner tonight so I'd like responses right away!

I bought the McCormick Grill Mates Chicken Rub, which is basically just a bunch of spices and herbs. The directions say "Rub generously on meat before grilling".

Should I remove the skin on the chicken? I'm going to use the leg/thigh. Also, do you think this needs to marinate? If so, how long?

Thanks!

I'd remove the skin and I'd marinate it. It will make it more flavorful and it will taste yummier.

Re: Cooking question - BBQ Rubs

guess it depends if you eat the skin or not.. the skin will prevent the chicken from getting too overcooked...but if you want it to be healthier, i would take the skin off, maybe put some olive oil and the rub.

I marinate it for an hour or so.

Re: Cooking question - BBQ Rubs

I would prefer the skin off (healthier), but that is up to you. A dry rub will work either way. Since it is a dry rub, you do not need to let it 'marinate' like a liquid. But I usually rub it on and let it sit for little while, but it isn't like it is going to be absorbed in like liquids do.

Good luck.
