Cooking for one...

Anyone have any great ideas to cook for one (and a picky toddler Chat Icon ). I hate to cook..and cooking for just myself (and a picky toddler) is turning into crap for dinner (mac and cheese, chicken fingers, eggs, etc). I need some ideas that are easy to make, that will reheat well, so I can take some leftovers for lunch, or have it again another night for dinner. Help please Chat Icon

PS. I don't eat veggies...so keep that in mind. I know it's bad not too, but I don't like 'em Chat Icon

I made DS chicken meatballs and froze them.

I would maybe roast a chicken and use it for 2 meals/lunch.

Why not make things that also freeze well, so you can always just defrost and heat up!

My fav's are:
Meatballs
Chili
Meatloaf
Stuffed Shells
Manicotti

All very easy to make and freeze very well!

I used to make whole wheat pita pizzas ALL the time...buy the whole wheat flat bread pitas (no pocket) and top with sauce & low-fat mozz cheese...a few mins in the toaster over and you're good to go. And just a few hundred calories. You can try with different toppings...works good on English muffins too, or a Boboli pizza crust.

Also easy is shake and bake for chicken or pork...you can just coat as much meat as you need and save the rest...serve with a flavored rice.

if you have a crock pot, BBQ pulled pork is VERY easy and will give you tons of leftovers...eat on potato buns!

I do a lot of this....since Chris takes stuff, and I don't eat dinner until he leaves and C3 goes to bed...

I also like chicken pot pie and I do eat a lot of frozen pizza tooChat Icon

Get a rotisserie chicken. Eat the white meat and veggie or salad for dinner. Use the other breast and make chicken salad with celery for tomorrow's lunch.

Dreamfield low carb pasta and sauce. use left overs for lunch.

cold cuts & pita bread.

Lean cuisine and a salad

homemade chicken soup is easy, and you will have leftovers too

Maybe if you did some exciting things with veggies you would eat them Chat Icon !! I am a firm believer in forcing myself to love veggies.

You can always make yourself an omelette for dinner. It's healthy & filling.

I cook just for DH alot. I make chicken cuttlets. I take two & bake them with jarred sauce & cheese. I take two and cover them with a pan sauce- 1pt chicken stock, 2 part marsala wine, mushrooms & flour. Then I keep two plain that DH can do something else with- wrap etc. Keeps us going all week.
