Help, I need new cookie sheets or some advice on how to prevent the bottom of my cookies from burning. I have been using the same recipe and same baking trays for as long as I can remember. The past 3 batches of cookies I made, the bottoms all burn. I used baking spray on the last batch and it did help a little but I would prefer to not need to rely on that since it wasnt perfect.

Anyone have any tricks or cookie sheets they love?!? Anyone use the silicone sheets?

Are you using dark metal cookie sheets? The darker the metal the more heat it absorbs.

Do you leave the cookies on the cookie sheet to cool? As soon as they come out of the oven, put it on a cooling rack. If you leave them on the sheet, they continue to bake.

If you don't want to use a nonstick spray, try using parchment paper.

Is your oven rack too low? Raise it one level.

I have a friend who swears by the silicon sheets. I tried it with her once but I'm not sold on them yet. Parchment paper should give you the same effect.

You may need to lower the temperature and adjust the level of the racks. I have mine at 3 and 4 from the bottom. I start on the bottom rack and check about half way through, I then rotate the tray and bake on the top rack. I use the bake time I have as a guide and adjust by looks.

Yup! I never use baking spray either, usually silpat or parchment paper. Cookies are also tricky, you kinda have to take them out before they look completely done or run the risk of burning.

thanks all - going to check out parchment paper, then silpats

I do remove asap and put on cooling racks so that's not the problem, and I rotate half way trough.

Just find it odd that this is suddenly a new problem

Could be the baking spray, or your oven needs calibration. Put a thermometer in there to check for temperature accuracy.

I have heavy aluminum baking sheets from Williams and Sonoma, and silpats to fit. Sometimes I use parchment, depends upon what I am baking.

The darker the pan, the darker the baked good.

ALWAYS use silcone baking mats or parchment paper. Also, light colored cookie sheets are best, the darker the metal the more heat they retain and the more likely your cookies will burn. Also rotate your cookies from front to back and top to bottom when baking.

ETA - Don't use cooking spray. Cookies are suppose to be baked on ungreased cookie sheets, the cooking spray will cause the bottoms to burn.

Pampered Chef cookie sheets are the only ones I’ve used that I like. (And no, I don’t sell it. lol)
