Chives?
We have a bunch of chives coming up in our garden so I am looking for some recipes that use them. Most of what i have found have been dips or cheese laden entrees.
Anyone have a favorite healthy recipe to use chives in?

I love them in omelettes. You can probably use them in most soups and salads.

you can use them in so many things!
crab cakes
baked potatoes/roasted potatoes
scrambled eggs/omelets
biscuits
rice/risotto
orzo
sprinkled on pasta dishes
in chicken/steak marinades
on oven fries
you could make a flavored butter to top steaks with...
on chicken piccata...

I threw them in to mashed potatoes two weeks ago. delicious.
using 2% milk it's not so bad 
I threw a garlic clove in to the boiling water with the pappas and then mashed them threw my metal colander. threw in the chopped chives, warmed milk with melted butter (I melt the butter in the milk on the stove separately and add salt and pepper before I mix it in) and whipped to fluffy oblivion.
it was delicious.
I love the other ideas on the thread as well.
