i make an uber simple version with either left over roasted chicken or raw chicken breasts, diced.
if I am using raw chicken, I
dice onion, garlic, celery and carrots (amounts to your liking..say one small onion, 3 cloves or garlic, 2 ribs of celery and a few carrots)
in a soup pot I add olive oil and sear/par cook the chicken, turning frequently.
I remove the chicken (adding addt olive oil if necessary) and sautee the veggies until fragrant,adding salt and pepper sometimes adding oregano or thyme, or a bay leaf (up to your interpretation)
once that is done, I add about 32 oz of chicken stock and return the chicken to the pot to simmer/cook through and I adjust for seasoning.
I cook the tortellini in a second pot.
when all is done, I spoon tortellini into a bowl and ladle the soup on top, hitting off with generous scraping of parmiggiano reggiano and serving with yummy crusty bread
ETA: if I am using pre cooked chicken, I just skip the browning part and keep everything else the same, adding the cooked chicken in when I add the broth.

I just made a one-pot version of this last week!
Into a big sauce pot, I put olive oil, garlic, onions and mushrooms and browned them a bit. Then I added water (10-12 cups) mixed with 2 packets of no-sodium chicken bouillon.
I cut up 2 chicken breasts into small pieces and added them once the water was boiling, and then added a package of frozen veggies. Then added the tortellini about 5 minutes before I turned off the stove. Also added some seasonings to taste...fresh herbs would be great if you have them!
