I have a very easy one!
Take thin cutlets.. or thick ones that you have pounded thin and dredge them in a mixture of flour, salt, white pepper, paprika, onion powder, granulated garlic and Italian seasoning.
Add a bit of butter and a bit of olive oil (figure about a tablespoon of each) to a skillet and heat it up. Add the floured chicken cutlets and get them nice and golden on both sides. Take the cutlets out and add a little more butter. Dump in some sliced mushrooms - I use about a cup of sliced baby bellas and a cup of crimini or shitake mushrooms. You can use whatever kind you like/want. when the mushrooms are cooked and draining you will want to stir in about a cup of GOOD Marsala wine. Crank up the heat a bit until it boils. Deglaze. When the liquid has reduced by.. about 1/3 - 1/2 I add in a cup of chicken stock and stir for about 2-3 minutes or so - until the sauce is thick enough to cling to a spoon. Some people like it thicker.. if that is you - cook it a little longer. Then I stick the cutlets back in and cook them about 5 minutes or so until they are cooked through. Correct the seasoning in the sauce and your pretty much done!
You can add another pat of butter at the end to give the sauce a nice sheen if you want.
Take it all out, garnish with some parsley or basil leaves and serve.
Sometimes - instead of adding the chicken back to the skillet, I will put the chicken in a baking dish, add the sauce and mushrooms and then sprinkle it with a handful of Italian Cheese Blend. Then I put it in the oven at 375 for about 5-7 minutes and serve it right in the baking dish.
