Chicken Legs
I only really eat chicken breast vs dark meat or any other part of a chicken. When I was a child my aunt made a big deal about eating the "veins" in the chicken and how gross it was and that changed my chicken eating for years to come.
But, I've discovered that my DS enjoys eating chicken legs and so I want to make some for dinner this week.
But, how do I make them? I've never made chicken legs. Do you remove the skin?
Anyone have a flavorful and healthy chicken leg recipe?

I leave the skin on. You can make them in so many ways!
For Loey, I usually roast them.
Sometimes I just season them with salt and pepper and sprinkle with chili powder (it really isn't spicy at all). Then I roast at 475 for about 40 minutes, then brush with homemade BBQ sauce and bake 5 more minutes.
Other times I will just season them up any old way (salt, pepper, garlic powder, adobo seasoning, onion powder, any yummy spices you have) and roast for about 45 minutes. I like to get a nice crispy skin.
Pioneer Woman has a yummy recipe for yogurt panko chicken legs, I make those too.
Sometimes I roast with lemon, garlic & rosemary (just mix up some EVOO, lemon juice & zest, chopped fresh garlic, chopped fresh rosemary, salt & pepper).
Those are my most common ones that Loey loves!

Oh also, if he loves chicken drumsticks he might also love chicken thighs (loey does too!) You can make them the same way as the drumsticks or make a mix of thighs and drumsticks

Leave the skin on, it makes the chicken super moist. We don't even eat the skin, but always cook with the skin on.
Our tried and true way to cook chicken legs (drumsticks or with the thigh) is to season with:
Adobo Garlic Powder Sason Accent (the regular white box one)
Season over the skin and rub it in. Place in baking dish, cover, and bake at 400 for an hour. Uncover and bake a little longer to get a more golden color.

this is how I make them.. if I want to jazz it up, I'll marinate them in that seasoning and with orange juice overnight and then just roast them the following day (without the juice so they roast nicely)
