chicken ideas...
Can anyone share some chicken recipes with me? I am looking for something different to make with my chicken breasts instead of my usual chicken cutlets and chicken parm.

stuff it or roll it with itallian cheeses, spinach, prosccuitto, or spinach and feta! francese, marsala, parm crusted.

My FAVORITE chicken recipe EVER is chicken scampi:
Chicken Scampi
•1/2 cup butter •1/4 cup olive oil •1 teaspoon dried parsley •1 teaspoon dried basil •1/4 teaspoon dried oregano •3/4 teaspoon salt •4 cloves garlic, minced •1 tablespoon lemon juice •4 boneless chicken breast halves, sliced lengthwise into thirds
In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano, salt and garlic and mix together in the skillet. Stir in lemon juice.
Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.
*Notes: I coat the chicken in seasoned flour first (mix together flour, ½ - 1 tsp oregano, parmesan cheese). To make it even easier, I get all the dry ingredients together in a pinch bowl first – the parsley, basil, oregano, and salt. That way I can just throw it in the pan once the butter’s melted. I like garlic and don’t actually mince the cloves myself so I usually toss in a tbsp of chopped jar garlic. You can also use white wine instead of lemon juice.

I also ake shortcut cordon bleu LOL. I'm too chicken (LOL) to try and roll it up. So I bread and fry chix cutlets like normal, then top it with ham and swiss and pop it in oven until cheese is melted.

Another really easy recipe for chicken pieces (legs/thighs) is honey chicken. So moist and delicious.
1/4 cup butter, melted 1/4 cup orange juice 1/4 cup honey 1/2 teaspoon salt 1 broiler/fryer chicken (3 to 4 pounds), cut up (I bought the Perdue pack already cut up)
In a shallow bowl, combine the butter, orange juice, honey and salt. Remove 1/3 cup and set aside for basting. Dip chicken pieces in remaining butter mixture; place in a well-greased 13-in. x 9-in. baking dish. (I used a 9x13 Pyrex and didn't grease it).
Bake, uncovered, at 350° for 1 hour or until juices run clear, basting occasionally with reserved butter mixture.
I basted every 20 minutes, then again when there was 10 mins left, then again when I took it out of the oven.
I basted using the remaining butter, and also the drippings in the pan.
The result was SUPER moist delicious chicken. Just a hint of sweetness. I served with stuffing and buttered egg noodles.
This was SO easy and tasty!!!

Here's another one I found... I made it once, forgot about it. I need to add it to my rotation now.
Chicken Caesar Tetrazzini
8 ounces cork screw pasta uncooked 2 cups cooked chicken cubed 1 cup chicken broth 1 cup Caesar Dressing 1 jar sliced mushrooms drained 1/2 cup parmesan cheese grated 1/2 cup bread crumbs
Cook pasta according to package directions. Drain and combine with chicken, broth, dressing and mushrooms in a in a 2-quart casserole. Mix together cheese and bread crumbs; sprinkle over spaghetti mixture. Bake at 350 degrees for 25 minutes or until casserole is hot and bubbly.
Made this last night - really EASY. I used fresh mushrooms. Next time I'm also going to add broccoli. And instead of bread crumbs and parm cheese on top - I'm going to crush Ritz crackers.

Asian Orange Chicken
Sauce: 1 1/2 cups water 2 tablespoons orange juice 1/4 cup lemon juice 1/3 cup rice vinegar 2 1/2 tablespoons soy sauce 1 tablespoon grated orange zest 1 cup packed brown sugar 1/2 teaspoon minced fresh ginger root 1/2 teaspoon minced garlic 2 tablespoons chopped green onion 1/4 teaspoon red pepper flakes 3 tablespoons cornstarch 2 tablespoons water Chicken: 2 boneless, skinless chicken breasts, cut into 1/2 inch pieces 1 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon pepper 3 tablespoons olive oil Directions
Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes. Place the chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours. In another resealable plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat. Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil. Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low, add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.

Buffalo Chicken Baseballs
Chop some onion and celery. Mix it with 4 TBS cream cheese, 1 TBS butter, hot sauce, and cooked chicken. Wrap it in a Pillsbury croissant roll (really it's two rolls - each package should be broken into 4 "baseballs". Dust the baseballs with breadcrumbs and some EVOO spray and bake. I have the actual recipe at home if you want it.
Throw chicken, wing sauce, and ranch dressing in the crockpot all day. add some cream cheese before shredding the chickena nd make Buffalo Chicken Sandwiches.
Coat chicken cutlets with French's fried Onions instead of breadcrumbs.
Coat the chicken in seasoned flour, cook on stove until juices run clear. Remove chicken and to the pan add onion and mushrooms. When those are cooked down add white wine, dijon mustard, tarragon, and heavy cream to the pan. Mix chicken back in when that heats through.
Heat some oil on the stove with some minced garlic in it. Dip chicken in that mixture before dipping in breadcrumbs. Then bake.
Add chicken to crockpot with salsa and a packet of taco seasoning. Add sour cream before shredding chicken. Serve in tortilla shells with shredded cheese and all the taco fixings you like.
