Cathiolic girls with GD...a question about Lent.

Anyone have any good lunch/dinner ideas for today and Fridays during Lent? Pizza or pasta have always been my staple in the past but now with the GD I can't have either. I am not a salad person at all. The only things I can come up with are salmon (but I know we aren't supposed to have too much of that), grilled cheese on wheat bread or eggs. Anyone have any other ideas?

Tilapia is safe to eat everyday. Not sure if your a fan and I don't think I could stomach eating it everyday myself BUT it's a good and quick friday night meal.

Costco sells frozen cleaned tilapia filets - just bought them this past weekend.

Tonight we're having stuffed salmon

It's totally your call of course, but I would REALLY think you have a very valid excuse for eating meat if you can't come up with something else! I had GD but I'm blanking on what I ate for dinner at the moment. You could do breakfast for dinner and eat eggs, although you probably already have more than anyone would ever want if you're anything like I was.

I think you should really pay attention to your health. Do notfeel bad about it. If you are concerned about it, talk to your priest and I am sure he will agree.

Another option is shrimp.

i could barely stomach meat when I was pg, and had GD. I ate a lot of beans. Veggie burrito on low carb wrap would work if you're still not comfortable eating meat.

I work for the Diocese and i have asked about this... They say small children, pregnant woman and the sick do not have to follow

According to our family priest pregnant women are exempt from fasting, etc.
