Candy Making

I am helping my friend with her wedding and have made a couple of baskets and crypacks. I am about to volunteer to make chocolate lollipops or other candy. My question is, am I crazy to volunteer for this or is it something that can be done?

Chocolate pops or pieces are very easy to make. You just need to be careful about not burning the chocolate, make sure the trays are completely dry before adding the chocolate and tap the trays to get air bubbles out. It goes faster if you work with multiple trays.

Just think about storing them...you'll need a cool, dry place. If you put them in the fridge they will condensate (that term may be wrong but don't put them in there)!!! I would make a practice batch just to see how long it will tak you so you know how far in advance you'll need to get started. I've never done more than a couple dozen at a time!! GOOD LUCK!!

for my cousin's shower we stored them in clothes boxes, side by side one layer, we had them stored for about 2 weeks like that and they were fine.....
