Cajun Jambalaya?
Does anyone have a good receipe with brown rice? and on the healthier side? Thank you

Use an Emeril recipe from food network. Instead of those fatty sausages (andouille) use lean chicken ones. I add lots of shrimp. Use non-fat half & half instead of cream or 1/2 the amount of cream.
Once you make the Jambalaya you can put it over anything.
