Burgers?
What kind of mince do you use? Do you make your own?
I'd never made burgers before today. I barely even eat burgers and I haven't had fast food burgers since I was about 5 so I really don't know what they taste like.
That being said, today I decided to make my own burgers. I bought two pieces of chuck steak and two pieces of strip steak and made my own mince with an attachment from my mixer.
Has anyone done this before and what kind of meat do you use? It tasted delicious and I am wondering how I can improve on it.
TIA!

Re: Burgers?
If I want a perfect and decadent burger I use ground sirloin mixed with bacon grease Healthy no... fabulous, YES!
otherwise, random ground beef 80% lean (which is a mix of all the trimmings from the bucher ground together) is usually best...

Re: Burgers?
For burgers I use an 80/20 mix (sometimes a 75/25). You need the fat for the taste..

oh heck no.... I'm a total DIY'er in the kitchen, but I'm not THAT hardcore.... Things I don't do in the kitchen: make mayo make chicken stock grind meat
Things I DO do (that many people don't): freshly grind all spices make all salad dressings make all sauces from scratch make all (indian, jamaican, ethiopean) curry/spice mixes from scratch
As for the chopmeat, as long as you go a reputable butcher, there's no reason to not trust their chopmeat
