BFD: Breakfast for Dinner
I want to start doing a breakfast for dinner meal maybe every other week?
I need some ideas! What's good but not too unhealthy... and not too expensive?
I want to do a breakfast pizza next week courtesy of Smitten Kitchen
What can I serve on the side? Does it NEED a side dish?

I just did breakfast pizza last night. Mine is different though - not even half as fancy!
I served citrus salad with honey-lime dressing and homemade hash browns on the side. I also did 'Orange Julius' drinks.
I really like having 'salad' with dinner so I almost always do some kind of fruit salad when I do breakfast for dinner. I also have recently fallen madly in love with making homemade hash browns - so they wound up on the menu too!

Tell me about this citrus salad....
Hash browns sound yummy! How do you make yours? I've only made them once before and I basically just took 2 russet potatoes and stuck them into my food processor to shred them. Then sprayed nonstick skillet with oil, and cooked on both sides until crispy - then cut into wedges.

Citrus salad (for me) is just oranges, grapefruit and tangerines cut into chunks (no peel) and tossed in a bowl. The kids like it dressed because it makes it sweeter. I chop up strawberries and squeeze lemon juice over them to break them down. Then I add about a quarter cup of honey and mix it up and toss it into the citrus fruits. We like it.
I do my hash browns the same as you - except I use Crisco instead of spray (I like it fattening!). I hand grate the taters (then dry them and season with a dash of s&p) and I like to grate a little onion and a hint of cheese into them before putting them into the pan. You have to go super easy on the cheese or it sticks. Onion too - too much and the browns don't come together as nicely.

Breakfast Casserole!!!!!!!!!!!
Hash browns..your breakfast meat of choice...peppers, onions, cheese..you get the idea...and eggs, scrambled, poured over all of the ingredients in a pyrex, bake and delicious!!!!!!! You can do anything you like...whites, feta, spinach, make it however healthy you want...

Some of our other breakfast for dinner faves:
Baked French Toast casserole (I serve with bacon and some sort of fruit salad)
Frittata - potato, onion and pancetta frittata is a huge fave in our house. It's nice with a light spring salad.
Poached eggs with Hollandaise sauce, toast and asparagus.

DH who is not a big fan of breakfast for dinner likes this. I make it with a spinach salad (Spinach, tomato, mushroom & bacon if I have it on hand with honey mustard dressing - I like Ken's light)
I got this recipe from a poster on this site. (sorry I can't remember who). It's crust-less & soooo easy. This recipe calls for onion, spinach and munster cheese but i've used asparagus, mushroom, onion, whatever veg I have on hand. Use whatever cheese you want too. I use a little less than this recipe calls for. I actually think 2 cups is plenty.
Crust-less quiche
1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
** Basically all you need are the 5 eggs (I add a splash of milk) and add whatever veg & cheese you like.

i did something similar & put in crockpot delissh !

My DH makes pancakes that are to die for- he uses that cheapo corn muffin mix and adds blueberries. So good! We usually have turkey bacon on the side.

two nights ago I made sort of an easy cheesy huevos rancheros- but it wasn't anything gourmet...
I basically put some refried beans on a plate and then laid two fried eggs on top
What I do is make them over easy- once I flip them, I add about 1/4c of salsa and some cheese... once the cheese melts I slide the whole thing onto the beans... you can also put this on top of a tortilla.. I, instead, ate mine with tortilla chips sort of like you'd eat nachos.
