I've only ever been there on a stop on a cruise - but the snorkeling was incredible!

it was a stop on a cruise for us as well... we did a tour that included ziplining and cave tubing. you HAVE to do both, it was incredible.

we went to ambergris caye, which is a peninsula that comes down from mexico into the bay on the north end of the country. the "city" area is san pedro, which is a fun town for drinking, eating, and booking tours to see some of the mayan ruins inland, cruises, ziplining, the zoo, snorkeling, etc.
AWESOME scuba/snorkeling
super friendly people, and as a result, the tourists are happy too. we made so many vacation friends there!
ambergris caye is def a little touristy, but in a laid back kind of way (not like the bahamas or anything like that) but i know caye caulker is also GORGEOUS and much more quiet--depends what you're looking for.
