been on a roll...
with the nutritious dinners lately!
i made this eggplant & pesto pasta last night and
tried to keep it a little lighter so i used a little less cheese and a little less olive oil for the eggplant. we had it over barilla plus farfalle. yum!
i also had my first go-around with baking fish in a foil pocket--had it with rosemary, lemon, garlic, olive oil, red bell peppers, portobella mushrooms, and baby spinach. it was awesome!
anyone have any other good flavor combs for baked whitefish like that?

oh wow!! that pasts sounds delicious. perfect veggie dinner dish!!
as for the fish, I just made blackened cod fish on friday night. it was delicious!!!
I made this blackened seasoning mix
•1 teaspoon salt •1 teaspoon minced fresh thyme •1/2 teaspoon dried oregano •1/2 teaspoon cayenne pepper •1/2 teaspoon sweet paprika •1/2 teaspoon ground black pepper
and in a heavy iron oven proof pan heated up some oil. I sprinkled the seasoning all over one side of the fish, generously. I put in seasoned side down in the pan and let it cook for a few minutes, before transfering the whole thing to the oven (which was already heated at 350 with sweet potatoes cut into rounds with salt)
served both with some basic sauteed spinach. such a great and healthy meal...and so fast!
