pistachios are my favorite nuts in baklava.. but you can mix it up with walnuts also.. butter is your friend and you don't have to mix chopped nuts in sugar at all otherwise will be too sweet.. and when you make the sugar syurp, throw in a cinnamon stick, and cloves and some nutmeg and make sure to take the cinnamon and cloves out when you pour on the syrup..

Only when my mom makes it! She uses simple syrup. Most restaurants use honey which I am not a fan of.

i make mine with walnuts only. and i also add the rind of one orange when the syrup is simmering. i agree that butter is your friend but i use unsalted butter.
