Re: Anyone use buffalo meat?
Yes! One time I went into Best Yet and saw "gourmet burgers" and bought it to try. After I got it home, I looked it up in a cookbook and saw that the meat should only be cooked med rare to med or else it will be dried out. I was very nervous because we usually eat med well to well. So I held my breath, did what they said and I was converted! LOVE it!!
I haven't seen it many places, but my local Best Yet usually has it. I always make sure it has a really good date because it shouldn't be cooked all the way through and I get nervous about that stuff. But I SO recommend you try it! GL!

Re: Anyone use buffalo meat?
it's pretty good. i get the burgers from trader joe's from time to time. ground up, it basically tastes like a really lean beef. my advice if you're making your own burgers or whatnot is to add in some of the fat and moisture you would be used to having in your ground beef. like when we use buffalo (or moose or venison when our friends bring it back from hunting) we mince mushrooms and add a little olive oil to the mixture for burgers or meatballs or whatever. this gives it the fat and water content you need for it to be juicy & delicious without all the saturated fat.
