This is what i do:
mushroom stems garlic bread crumbs black pepper thyme parsley EVOO parm/percorino cheese
I put it all in the food processor until I get the crumbly consistency I like. stuff each mushroom. I put white wine in the bottom of the baking dish and a small bit of butter on each one before popping them in the oven!

I stuff mine with mushroom stems, onion and celery, bread crumbs, butter, thyme and lemon. Alternatively, I have also stuffed them with cooked crumbled sausage and all the above ingredients, except the lemon.

This is how my family makes them. You can also add some mozz to the mixture and I have also had them with pignoli nuts!
This is how I make them too! Just drizzle the top with EVOO and I also put a little chicken stock in the bottom of the pyrex similar to the white wine.
Another variation is to add cooked sausage, I did this with spicy sausage once and it was yummy!

I use this recipe - it's quick, easy, lowfat and delicious
3 cup(s) mushroom(s) 12 wedge(s) The Laughing Cow Light Creamy Garlic & Herb 1/2 cup(s) Progresso® Bread crumbs Italian-Style Breadcrumbs
Instructions
Unwrap cheeses and place in microwave for 30sec to minute to soften. Combine together crumbs, mushroom stems and cheese. Take spoonfuls and fill mushroom caps. Place mushroom caps filling side up on UNGREASED cookie sheet. Cook 20 min at 400 degrees Farenheit or until stuffing is lightly browned on top. Let cool, then serve. Mushrooms will be juicy.
