Any Vegetarians out there?
How did you transition???
I'm seriously considering it. I gave up meat for lent and although I miss eating it, I feel really good and feel like I have alot of energy.
Did you cut cold turkey (literally ) or ease yourself out.
Any recommendations on good meat substitutes?
BTW- I'm more of a pescatarian b/c I'm still eating fish (so I'm cheating a little)

i quit cold turkey! i've been a vegetarian for about 15 years. there are lots of soy products available in the grocery store to substitue for meat. ex - morningstar chicken strips, veggie burgers, taco meat, etc.

Yep, lots of substitutes! Lots of people think they'll be near starving, but you can make almost anything as a meat substitute. You just have to be more creative. I was never a big meat eater and about 4 yrs ago I had all 4 wisdom teeth pulled and since I couldn't eat anything anyway for like 2 weeks I decided I just wouldn't go back. So I kind of did it cold turkey.
The one part I found hard was researching what actually contained meat products so I could avoid it... like i won't eat ceasar salad because there are traces of anchovies in the dressing, I won't eat most soups because they are made with chick or meat stock and I won't eat jello or marshmallows because they are made with animal by products... it depends how seriously you want to do this because it does take some work.

I did it cold turkey too, 10 years ago this summer.
I agree - it was so easy! I don't miss meat at all. When you first start, try recipes with lots of flavor and other stuff in them, so that you don't notice how the meat substitute tastes a little different. Mexican works really well - take some fake chicken, cook it up with some taco sauce, put it in a burrito with some shredded cheese, lettuce, tomato, sour cream, etc. Yum! I also do sloppy joes - just buy the sloppy joe mix (it's like $1 in the supermarket) and use Morningstar ground "beef" instead of the real stuff. Tastes great! That fake deli meat you can get in the produce section is a little weird at first, but on some whole wheat bread with mustard, lettuce, tomato, ooh and some sprouts - yummy.
Now, I think that just some fake chicken with a few spices cooked over rice with some veggies is delish - it's what I'm having for dinner tonight! - but there are ways to trick yourself for a while if you're not used to the taste/texture.
