Re: another sorry...disney with dc
How long are you staying? I would at least do a 3 day pass. Not sure if the hopper is worth it. unless you plan to do 1 day 1/2 and Magic Kingdom.
I would do 2 days at Magic Kingdom and then another park.
If you want to do more parks then def get the
5 day pass/hopper.

Re: another sorry...disney with dc
We've been to Disney a ton of times. We generally do down for a week. We do 2 days at Magic Kingdom, 1/2 day at Animal Kingdom, 1/2-1 day at Hollywood Studios and 1 day at Epcot.
We generally do one day at one of the water parks if we're there during nice weather.
We do the park hopper only because we stay on property so sometimes we will go back to the hotel in the afternoon and go to a different park at night. Or go to extra magic hours at a different park at night.
ETA: For Magic Kingdom and Hollywood Studios we try to get there when they open (we actually make breakfast reservations at Magic Kingdom for about an hour before the park opens so we eat and then head right to the rides). For Epcot and Animal Kingdom we don 't rush in the morning. We generally get there around 10ish.

Re: another sorry...disney with dc
We always get a park hopper - this way we have options and are not locked into ONE park for the day. This way if we get down there and DDs don't like one park we aren't stuck there we can hop somewhere else.
Our days look like: At the park at opening (since they are young and go to bed earlier we don't stay out until 11 so it is easier to get up and be at the parks when they open so we get in a ton of rides before the lines start)..
We tour until lunch - have lunch usually counter service in the park - then depending on the time, how crowded it is, tired we or the DC is we do one or two more rides OR we leave and go back to our resort. Nap time, swim time, shower, change and head back to the park for dinner. We usually hit EPCOT most nights for dinner since they have a variety of sit down options. So we would do say AK, HS or MK in the morning and EPCOT at night. We go back to the park around 4 or 5 hit a few rides or walk around depending on what we feel like, eat an early dinner now that we have DDs around 6 and do a ride or two then head back to the resort.
AK I think really you CAN go to for a full day but it closes the earliest so you lose the evening basically esp in off season when they close around 5 or 6 if you don't have a hopper. I like to do Ak in the morning then EPCOT at night.
Honestly whether you get hoppers or not REALLY depends on your tastes, what you want out of your trip, how long you are in WDW etc.
If you are staying off property it might not be as easy to park hop and you might rather go to a park for the day and leave and have dinner off property. So I would sit down and see what you want to do and go from there.
I would say definitely do MK and EPCOT - but then it is really a toss up - I find people either LOVE AK or HS or they hate one of them. I happen to like AK but others I know don't. But they love HS and while I like it - DD wasn't crazy about it. It is a lot of shows and rides for adults - so there was a limited amount of things to do for a young child who doesn't meet height requirements or doesn't sit still for shows. DD was 15 months and she liked Playhouse disney (but you sit on the floor and she wanted to run up on stage so that was tricky) she like toy story mania ride, and LOVE the muppets - she was small at the time so we didn't do the honey I shrunk the kids play area. She either didn't care for the rest or it was too old for her. She did like AK though.
I suggest before you decide that you should pick up the unofficial guide to WDW 2010 it is a great book! TONS of tips that would really be helpful whether you are staying on or off property (it even suggests OFF property restaurants). In it they detail each park and give a break down of every ride, show, attraction - by age, scare level, if it has height requirements. This way you can sit down with the book and determine what you think will best match your DC's personality and likes and dislikes. Then decide if which if not all parks you want to visit.
We will be doing almost all MK and EPCOT with at least 1 morning at AK and we might depending on how things look go to HS for a morning but we aren't locking ourselves into that. That is why I like the hopper - b.c I can plan sit downs at night but it doesn't matter where we go in the morning b.c we are not locked into any park.
