A good side dish
I am making duck for DH's bday when his family comes over. I would like to make a nice side dish. I was thinking of making baked sweet potatoes and a salad, but that sounds so boring.
Does anyone have a recipe with potatoes and veggies together? Something gratin like or something I can just throw in the oven?

Mmmm. potato dauphinoise!
A few weeks ago I made a zucchini gratin from a Barefoot Contessa recipe. Even my husband loved it!
Or Hasselback potatoes. I don't have a recipe, but if you google either one, you should get some great results!

Butternut Squash, Apple, Onion Au Gratin
Cooking spray 1/4 cup flour 1 teaspoon salt 1 pinch cinnamon 1 butternut squash - peeled, seeded and sliced 4 apples - peeled, cored and sliced 1/2 sweet onion, thinly sliced 1/2 cup chicken stock 1 cup shredded sharp Cheddar cheese 3 slices bacon, cooked and crumbled
DIRECTIONS Preheat oven to 350. Spray 9- x 11-inch glass baking pan with cooking spray. Place flour, salt, and cinnamon into a large plastic bag. Add squash, apples, and onions; shake until lightly dusted. In glass dish, layer 1/2 of squash, apples, and sweet onion. Pour 1/2 cup chicken stock over the top, then sprinkle 1/2 of cheese. Layer with remaining squash, apple, and onions. Pour remaining chicken stock over the top, and cover with foil. Bake in preheated oven for 60 minutes. Take out and sprinkle with bacon crumbles and remaining cheese. Return, uncovered, to oven; bake for another 5 minutes. Let sit for 5 minutes before serving.

Always a hit at my house on holidays..
Candied Sweet Potatoes You'll need: 8 Sweet Potatoes 1 Stick Butter 1 Box Light Brown Sugar 1 Cup Water Boil 8 sweet potatoes, in their skins. After boiled, take skins off and cut in half long-ways Lay flat side down in baking pan (1 layer, don't stack) In a saucepan, melt the butter and then add the water and brown sugar Stir constantly until it boils Pour over potatoes in the baking pan Bake at 350 degrees for 15 minutes, then flip the potatoes over and baste them with the liquid in the pan. Bake 15 more minutes.
